Cransations® Apple Crisp Cups

1 apple

2 cups Cransations®

¼ cup water

2 tbsp. maple syrup

2 cups all-purpose flour

2 cups rolled oats

1 ½ cups brown sugar

½ tsp. ground cinnamon

2 ¼ cup butter

1 cup chopped pecans

2 tbsp. butter

2 tbsp. brown sugar

1 tsp. salt

Preheat oven to 350 degrees F. Grease 4, 12 cup, mini-muffin tins.

Mix apples, Cransations®, water and maple syrup together in a saucepan. Bring these items to a simmer over medium-low heat, stirring occasionally. Simmer until apples are partially cooked, about 5 minutes. Remove from heat.

Combine flour, oats, brown sugar and cinnamon in a large bowl. Cut the butter into the flour mixture with pastry cutter until the mixture looks like coarse crumbs.

Place a heaping tablespoon of the crust mixture into a mini-muffin cup, press it into the cup so that it covers the bottom and pushes up to the sides of the cup (there will be crust left over). Place about 2 teaspoons of filling in the crust.

Combine pecans, brown sugar and salt in a bowl. Cut in the butter to make a crumbly topping. Spoon desired amount onto top of muffins.

Bake in the preheated oven until golden brown, 15-20 minutes.
